Garlic chives, Spice
Garlic chives (Allium tuberosum) is a distinctive plant with strap-shaped leaves, in family Alliaceae. It is native to Asia and is commonly known as Chinese chives, Chinese leeks, ku chai, jiu chai and Oriental garlic. Garlic chives is a hardy, herbaceous, spreading perennial, growing up to 40 cm tall. Garlic chives has leaves that are flat, soilid, and paler green than those of chives, with a garlicky aroma, flavor and a sweet undertone. The flowering stalk is much taller than the leaves, producing loose clusters of small, white, star-shaped florets. Garlic chives is well-known in Asian cuisines, and both stalks and flowers are used as a flavoring. It is a common ingredient in Chinese, Japanese and Korean cuisines. Garlic chives is high in dietary fiber and protein and low in fat. It contains a high level of vitamin C, vitamin A, vitamin B1 and B2, carotene, thiamine, riboflavin, iron and calcium.
